Forget the coleslaw! This simple salad is a fresh, crunchy delight: healthy, full of flavour, delicious, yet easy and quick to make. And there is no need for claggy mayonnaise either!
This salad combines the sweet tartness of green apple with fresh crunchy celery, carrots and sweet potato. (Yes you can eat it raw!). Walnuts and pumpkin seeds add extra crunch and nutritional value.
These ingredients are complimented with a gingery nutty tahini dressing. To make this dressing creamier and to boost its nutritional content you can add protein powder; plant-based ones work well (soy and pea), as does whey.
This salad is super as a main dish or as an accompaniment. It also keeps well in the refrigerator for about 3-4 days too.
Serves: 8 as a side dish, 4 as main dish
Preparation time: 15 mins

I know I said no more posts, but I wanted to share the good news with all of you!
I had just returned from my son’s Doctor appointment, and was relaxing before spending the rest of the day working on my school assignment. I decided to check my blog and there, in the notifications, was that big orange circle we all love to see so much.
I have come up with a special way
to celebrate this new milestone.
I’ll be making a special announcement
on Tuesday of next week. (May 30, 2017).
Good morning everyone. I am very short on time this Friday morning. I have an assignment due at midnight tonight and my son (who was injured) has a doctor’s appointment today. So, I decided to repost one of my first “Feel Good Friday” articles. This post includes a poem called ATTITUDE by Charles Swindoll. I felt like this was appropriate for my life right now. I could be completely stressed right now and have a crabby negative attitude about the current circumstances of my life. But, as the final line of the poem says: LIFE IS 10% WHAT HAPPENS AND 90% HOW YOU REACT. So, I hope this is a helpful reminder for you. (I know it helped me today.)
This will be my final post until Tuesday.

Last night, my son was inducted into the National Honor Society. At the ceremony, a past graduate of his high school was the guest speaker. She gave a very inspirational speech, telling her story of being a poor child in Jamaica, growing up a victim of abuse and neglect, after being abandoned by her mother when she was 1 1/2 years old. When she was 13 years old, she came to America to be with the mother who had abandoned her, only to have the abuse continue.

Today’s prayer comes from the Wiccan religion/spiritual belief. Contrary to the mythological and historical writings, as well as present day popular culture, Wicca is a peaceful religion of balance and harmony. Present day Wicca is based on pre-christian tradition from Scotland, Wales and Ireland. Here is a quote from Wicca.com:
“Witchcraft (Wicca) is a spiritual system that fosters the free thought and will of the individual, encourages learning and an understanding of the earth and nature thereby affirming the divinity in all living things. Most importantly however, it teaches responsibility. We accept responsibility for our actions and deeds as clearly a result of the choices we make. We do not blame an exterior entity or being for our shortcomings, weaknesses or mistakes.
