Apple Carrot and Sweet Potato Salad

YUMMMM!!!! This recipe looks amazing! I can’t wait to make it.

HEALTHY FOOD & RECIPES

Apple 26

Forget the coleslaw! This simple salad is a fresh, crunchy delight: healthy, full of flavour, delicious, yet easy and quick to make. And there is no need for claggy mayonnaise either!

Apple 21

This salad combines the sweet tartness of green apple with fresh crunchy celery, carrots and sweet potato. (Yes you can eat it raw!). Walnuts and pumpkin seeds add extra crunch and nutritional value.

Apple 15

These ingredients are complimented with a gingery nutty tahini dressing. To make this dressing creamier and to boost its nutritional content you can add protein powder; plant-based ones work well (soy and pea), as does whey.

Apple 2 prep

This salad is super as a main dish or as an accompaniment. It also keeps well in the refrigerator for about 3-4 days too.

Apple 2Serves: 8 as a side dish, 4 as main dish

Preparation time: 15 mins

Ingredients:

Salad:

  • 2 Granny Smith apples, cut into matchsticks

Dream Big, Dream Often

share_logoTom Slatin sent me a great idea via Twitter and I am going to do something a little different while on vacation. Here is the basic idea for this link share post:

  • I want you to leave a link to the blog which you love the most (not your own page!)
  • Reblog this post to help spread the love.
  • Leave a brief description of the page you love and why you love it!

This should be a ton of fun and is a great way to selflessly help another blogger.

Feel Good Friday: Attitude By: Charles Swindoll

Good morning everyone. I am very short on time this Friday morning. I have an assignment due at midnight tonight and my son (who was injured) has a doctor’s appointment today. So, I decided to repost one of my first “Feel Good Friday” articles. This post includes a poem called ATTITUDE by Charles Swindoll. I felt like this was appropriate for my life right now. I could be completely stressed right now and have a crabby negative attitude about the current circumstances of my life. But, as the final line of the poem says: LIFE IS 10% WHAT HAPPENS AND 90% HOW YOU REACT. So, I hope this is a helpful reminder for you. (I know it helped me today.)

This will be my final post until Tuesday.

There will be no allergy-free or

journal posts this weekend

or Monday posts.

HAVE A LOVELY

AND BEAUTIFUL WEEKEND!

GOD BLESS! NAMASTE!

NOW, ONTO THE ORIGINAL ARTICLE, ENJOY!

Last night, my son was inducted into the National Honor Society. At the ceremony, a past graduate of his high school was the guest speaker. She gave a very inspirational speech, telling her story of being a poor child in Jamaica, growing up a victim of abuse and neglect, after being abandoned by her mother when she was 1 1/2 years old. When she was 13  years old, she came to America to be with the mother who had abandoned her, only to have the abuse continue.

Happiness Is...For me happiness has become knowledge, It is an intellectual%2Ffeeling hybrid that copes with this world that leads to less crashing after a ‘Happy high’. Best that I can describe it, have a great day……..png

Today’s prayer comes from the Wiccan religion/spiritual belief. Contrary to the mythological and historical writings, as well as present day popular culture, Wicca is a peaceful religion of balance and harmony. Present day Wicca is based on pre-christian tradition from Scotland, Wales and Ireland. Here is a quote from Wicca.com:

“Witchcraft (Wicca) is a spiritual system that fosters the free thought and will of the individual, encourages learning and an understanding of the earth and nature thereby affirming the divinity in all living things.   Most importantly however, it teaches responsibility.   We accept responsibility for our actions and deeds as clearly a result of the choices we make.   We do not blame an exterior entity or being for our shortcomings, weaknesses or mistakes.   If we mess up or do something that brings harm to another, we have no one but ourselves to blame and we must face the consequences resulting from those actions.   No ifs, ands or buts and no whining… “
