Welcome to another weekly edition of Thankful Thursday, where I highlight one of my phenomenal followers!
This week, I have for you Mollie from the blog FRUGAL HAUSFRAU, and her recipe for Mexican Street Corn (YUM! 😍).
In her blogs, Mollie give recipes and tips on cooking on a budget. She says she’s always been frugal. She loves nutrition and wholesome foods. Mollie is interested in food trends, but likes good old fashioned styes as well. Here’s a bit of Mollie, in her own words:
“I’m a little Grandma, and a touch of Cook’s Illustrated with a dash of Bon Appetit thrown in, always with an eye toward the practical application of cooking and tending a family; after all I’ve been doing it since I was tall enough to pull up chair to stand at the counter, sink and stove – almost 50 years! This is what I’d like to pass down to my own daughter and son…”
The recipe I’m highlighting today is Mollie’s recipe for Mexican Street Corn. I’ve actually never had Mexican Street Corn, but I did see a youtube video recently. Here, Emmy from Emmy Made in Japan makes ELOTE’S (Mexican Street Corn). Mollie’s recipe is very similar, with just a few differences. I prefer Mollie’s recipe. Emmy doesn’t use sour cream, where Mollie does. I love the idea of mixing mayo and sour cream, instead of just straight mayo. Have a look:
