Wellness Wednesday: Easy Brine Recipes

As promised, I’ve gathered together some easy brine recipes to help you give that poultry some flavor. What is brining? It’s a type of marinating, which basically consists of water and salt. Of course, if you really want to add great flavor, you get a bit more creative than that, such as the recipes below! Many people (myself included) have tried brining at Thanksgiving and a few of the recipes are meant for turkey brining. However, brining isn’t just for Thanksgiving. If you plan ahead a bit, brining can be a regular part of your poultry recipes. ENJOY!

Basic All Purpose Brine

Ingredients

  • 1tablespoon black peppercorns
  • 2sprigs fresh thyme
  • 3 bay leaves
  • 4 -6cloves garlic, sliced
  • 4cups water
  • 12cup light brown sugar, packed
  • 12cup kosher salt

KENTUCKY FLAVOR BRINE

Ingredients

  • 2 ¾ cups water
  • ¼ cup bourbon
  • ¼ cup salt
  • 3 tablespoons sorghum molasses, Steen’s Pure Cane Syrup, or unsulfured molasses
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons pure vanilla extract
  • 2 cups ice cubes

BEER BRINE

Ingredients

  • 2 cups water
  • 1/4 cup kosher (coarse) salt
  • 1/4 cup packed brown sugar
  • 2 cans or bottles (12 oz each) beer or nonalcoholic beer, chilled
  • 1 whole chicken (3 to 3 1/2 lb)

Rub

  • 3 teaspoons paprika
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • f1/4 teaspoon pepper
  • 2 tablespoons vegetable oil

 

APPLE CIDER BRINE

INGREDIENTS

  • 8 cups unsweetened apple cider or juice
  • 2/3 cup kosher salt
  • 2/3 cup sugar
  • 6 quarter-size slices unpeeled fresh ginger roots
  • 2 bay leaves
  • 6 whole cloves
  • 1 teaspoon black peppercorns, crushed
  • 2 teaspoons whole allspice berries, crushed
  • 6 cups ice-cold water
  • 1 thawed turkey (10 to 25 pounds)
  • 2 oranges, quartered
  • 2 turkey-size plastic oven bags

WHITE WINE BRINE

Ingredients

  • 1 quart vegetable stock
  • 1 1/2 cups kosher salt
  • 6 bay leaves
  • 2 tablespoons whole black peppercorns
  • 1 tablespoon mustard seeds
  • 1 bottle 750 ml Pinot Grigio (I used Gallo Family Vineyards)
  • 2 large shallots, thinly sliced
  • 8 garlic cloves, crushed but left in the skins
  • 1 bunch (a good handful) fresh thyme
  • 2 lemons, sliced
  • Cold water (enough to cover turkey)
  • 16 pound turkey (giblet package and neck removed)

ROOT BEER BRINE

  • 2 (12-ounce) cans root beer
  • 2 cloves garlic, roughly chopped
  • 1/4 cup salt
  • 2 tablespoons freshly ground black pepper
  • 2 (1 pound) pork tenderloins
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/8 teaspoon ground clove
  • 1 tablespoon granulated garlic
  • 1 teaspoon smoked paprika
