Thankful Thursday- A Quick and Tasty Low Carb Lunch – BRILLIANCE WITHIN

When I saw this idea for a quick lunch, by Wendy on the blog Brilliance Within, I knew I had to share it. It is a super healthy lunch, (and super quick) packed with healthy fat, nutrient rich veggies and high in fiber. Wendy just “threw this together”, one day. LOL! 🙂 Doesn’t it look wonderful? Wendy, the author of the blog Brilliance Within , says she is a 56 year old from Manchester, U.K., who is an “honest blogger’ so you’ll get the good, the bad and the downright ugly” Wendy says you’ll benefit from her life experience, the mistakes she’s made and the lessons she’s learned over the years. She blogs on a variety of topics including : lifestyle tips, law of attraction, personal development, as well as health and fitness.
