Cacao Vs. Cocoa: Are You Eating The Healthiest Chocolate? (+ DIY Chocolate Recipe)

You may be asking “What difference does it make? Aren’t they both the same?” Chocolate is chocolate right? Well, no, in fact there is a big difference.

Cocoa is processed cacao, which has been roasted at high temperatures.The high temperatures destroy most of the health properties and antioxidants in a cacao bean.


Raw Cacao is made from cold-pressing raw, un-roasted cacao beans. This process preserves the antioxidants in the cacao bean.

We’ve all heard that dark chocolate is healthy, but do you know just how healthy raw cacao is? It is considered a SUPERFOOD!! Check out some of these statistics:


So, when you buy a chocolate bar, are you getting real chocolate? Well, no, most of the time, you are getting processed cocoa that has been mixed with cocoa butter, vegetable oil, soy lecithin, sugar, and high fructose corn syrup.

We all know that vegetable oil, sugar and corn syrup aren’t good for us, but just what is “soy lecithin”? Soy lecithin, made from genetically modified soy, is an emulsifier, meaning it helps mix the water and fats together. Soy lecithin, a type of fatty acid, is a bit controversial, with some touting health benefits, such as lowering cholesterol, and other saying it’s dangerous. My advice-avoid it altogether by making your own chocolate!
