Heavenly Coconut Lemon Bars

This is a recipe for those days when you must have something slightly sweet. This one does have some sugar, but it's whole sugar-raw honey and coconut sugar. Mind you, these are still sugars, but as far as sugar goes, they're on the healthier side. This recipe also contains coconut flour, which is tremendously healthy, with 10 grams of fiber per serving. My results: Before I send you to the main recipe I wanted to give you my thoughts. The coconut over powers the lemon rendering these a bit bland. I recommend cutting coconut flour to 1 cup and adding 1/2 cup almond flour. Perhaps increase lemon juice to 1/2 cup. You may need to increase tapioca a bit as well to compensate for the extra liquid.
