Happy Valentines Day! Flourless Chocolate Cake!

Happy Valentines Day everyone! Today, I’ll be taking time off from my usual posts, including “Ultimate Guide to Nutrients”. Because it’s a special day, I’ll only be posting one other blog today, my usual “daily inspiration”, with a valentine theme.

Today’s recipe definitely falls into the 15% category in the 85/15 style of eating. For those of you who aren’t aware of the 85/15 style, this is the style in which you eat healthy 85% of the time and then anything you want 15% of the time. You can find more information in my article How to Eat Healthy…You Don’t Have to be Perfect. Yes, this is a special recipe, for a special day. It does contain sugar, but it’s very rich and delectable. You wouldn’t eat very much at one time.

I was first introduced to flourless chocolate cake about 5 years ago. My family went out for dinner  at Scarpetta’s in Miami, to celebrate our 20th wedding anniversary. Scarpetta’s is a restaurant owned by Scott Conant, Food Network Star and Judge on the TV show “Chopped”. The waiter suggested dessert, since it was a special day. Around this time in my life, I had been gluten-free for about a year, and proceded to tell him I was allergic to gluten. He suggested a Scarpetta specialty, flourless chocolate cake. It was definitely an OMG moment. There haven’t been very many times when I took a bite of something, closed my eyes and actually said out loud “MMMM!, Oh my gosh! That is fabulous!”BUT, this was one of those times for sure. I was hooked.

The recipe below is not the one from Scarpetta’s, unfortunately. I tried to find it, but couldn’t. I’ve made several since that night, they all come REALLY close and taste WONDERFUL, but…well, there must be a secret ingredient to the Scarpetta recipe, because I haven’t matched it yet. It’s sort of like trying to recreate something your grandmother made. You get close, but something is always missing. Anyway, most flourless chocolate cakes have the same basic ingredients, just differing amounts. I do encourage you to continue using organic ingredients, even with “cheat” recipes like this one. We’re getting sugar, we don’t need the chemicals too! This recipe is one of my favorites of the one’s I’ve tried. I hope you enjoy. HAPPY VALENTINES DAY!!! 🙂 🙂
