Egg Cups with Goat Cheese and Spinach

I threw this recipe together one Sunday morning, for something a bit different. It’s a tasty, healthy and super easy breakfast recipe. Leafy greens should be a part of your daily diet. Spinach is high in vitamin K, vitamin A, manganese, and folate. So sneak some in whenever you can. This recipe would go well with Savory Pumpkin Herb Biscuits. ENJOY!

  1. These look delicious! Have you ever made your own goat cheese? I have a starter kit and can’t wait to try it out.

  6. I love how colorful this looks. Our teenagers would want the eggs to be more cooked, I wonder if one could one bake them a little longer without burning everything else?
