This webpage was inspired after a four year journey with atrial fibrillation. The first year was the absolute worst- I had been training for my very first marathon when this all started. So, needless to say, my life was completely turned upside down. I went from running 8 miles a day, to wheezing and gasping for breath after walking 60 feet. You all know how much I like videos. So imagine my delight when I saw that Fey had her own cooking show on youtube! This is one of my own goals (long time down the road!-school first!) Check out her channel: Fey Fitness Youtube Channel.
Some people in my life are transitioning to a vegan diet, which began in the new year (Not me! 🙂 ). I just want to add here, there’s nothing wrong with a vegan diet, but it’s not for me. I’ve been down that road. There’s just too much I can’t eat. You see, I have chronic sinus problems, which is one of the reasons I started studying nutrition. There are certain things that aggravate my sinuses, including starchy carbs (like pasta, bread, white potatoes and white rice), corn and soy. That, along with my gluten allergy makes being a vegan next to impossible. You take meat out of the picture, what’s left?! 🙂
So, I wanted to find some healthy recipes for those new vegans out there. That’s why I posted some vegan recipes over the past few days. Anyway, I’ve gotten a bit off track…Here’s another wonderful vegan recipe.
