I am in the middle of an assignment for school, which is due on Monday, but I didn’t want to let my blog slide. So, I took some pictures of my dinner tonight, to give you an idea of how I eat on a regular basis. This meal is super simple, super tasty AND super healthy!
The meal is 100% organic. The peppers are stuffed with grass-fed ground beef (1 pound), 1 cup cooked quinoa, 1 finely chopped onion, and some homemade tomato sauce, then topped with more sauce before baking. I made the filling in a skillet, stuffed the peppers, then baked at 375 degrees for 20 minutes. (or until the peppers were soft.)
The Shredded Rainbow Salad consists of 1 small bunch dragon kale (pictured below), 1 small head romaine lettuce, 1 shredded golden beets, 2 shredded carrots and 1 cup blueberries, with a homemade apple cider vinaigrette.

This was a great meal, and very easy to make. Eating a healthy, whole-food diet can be easy and delicious! I’ll be posting a quick daily inspiration in a little while. Have a great evening everyone. (I need to get back to my homework!) 😦
