The Purple Almond adds: Isn’t food awesome? I just love food. When I saw the picture of these beautiful bars, I knew I wanted to share them with all of you.  This recipe is very healthy. The crust consists of nuts and dates. Along with the purple potatoes, the filling includes typical sweet potato spices, coconut oil, almond milk, vanilla, lemon juice, salt and, the only sweetener, maple syrup.

Purple sweet potatoes are awesome and incredibly healthy. According to Health Fame, among other things, purple sweet potatoes contain 238% of the RDA for vitamin A.

According to the  video  below, from Nutrition Facts , purple sweet potatoes out preformed all other types of potatoes, both white and sweet, in a study on the anti-inflammatory effects of potatoes. (It’s short, only 2:45)
